Baked Mac N Cheese

Baked Mac N Cheese

* 1 (16oz) packages of elbow macaroni
* 1/2 cup butter
* 1/2 cup of flour
* 2 cups milk
* 2 cups shredded chedder cheese
* 8 slices of bread
* 4 tbsp of butter
* salt & pepper to taste

*Pre-heat oven to 350*
* Boil large pot of water to boil and add pasta until cooked (about 10mins)
* In large saucepan melt butter, add flour and stir until paste-like
* Slowly add milk to mix, pour a little mix, pour a little mix to avoid lumps
* Stir in milk until melted
* Pour cheese sauce over macaroni
(IF YOU LIKE JUST PLAIN MAC N CHEESE YOU CAN STOP AT THIS STEP...WE USUALLY ADD 1 CUP OF PEAS)
* Mix well and pour into a 9*13 glass baking pan
* Crumble bread in your hands and over Macaroni and Cheese mix
* Melt the 4 tbsp of butter and pour over the bread
* Bake for 25 mins.

Easy Chicken

Easy Chicken
* 4 chicken breasts with skin
* 1 tbsp olive oil
* 1 pinch garlic powder
* 3/4 cup of worcestershire sauce
* salt & pepper

*Pre-heat oven to 350*
* Rub each breast with olive oil then place in a lightly greased 9*13 glass pan
* Season with garlic and salt & pepper
* Pour worcestershire sauce over each breast
* Cover with aluminum foil and bake for 45 mins.

Seven Layer Dip

7 layer dip
* 1 lb turkey
* 1 16oz can refried beans
* 4 cups of shredded cheddar-monteray jack cheese
* 1 8oz container of sour cream
* 1 cup guacamole
* 1 cup of salsa
* 1 small can of chopped black olives
* 1/2 cup of chopped tomoatoes
* 1/2 cup of green onions

* Brown turkey in a large skillet
* Spread beans into bottom of 9*13 glass pan, sprinkle cheese on top, then add turkey, sour cream, guacamole, salsa and remaining cheese.
* Add black olives, tomatoes and green onions
* Refridgerate for an hour, serve. (You can skip this step)

Meat Loaf Pie

Meat Loaf Pie
* 1lb of turkey
* 1 small onion chopped
* 1 egg
* 1 tbsp ketchup
* 1 tbsp Worcestershire sauce
* 8oz bag of frozen corn
* 6 red potatoes boiled and mashed
* 1/2 cup of shredded chedder cheese
* Unbaked pie crust (SET OUT FOR 40 MINS PRIOR TO BAKING)

* Pre-heat oven to 350*
* Dice, boil and mash potatoes and set aside
* Cook corn according to package instructions
* Saute onion in medium skillet and add in turkey, cook until turkey has browned, drain.
* In medium baking bowl mix together cooked turkey/onion mix, egg, ketchup and worcestershire sauce.
* Spread pie crust in pie pan and put corn evenly across the bottom
* Layer turkey mixture
* Layer potatoes on top and cover with cheese
* Bake for 30mins

Cabbage Pancakes

Cabbage Pancakes
* 1 tbsp olive oil
* 1/2 small head cabbage sliced thin
* 1 1/3 cup of plain yoghurt
* 2/3 cup of milk
* 1/4 cup of oil
* 2 eggs
* 2 cups of flour
* 4 tsp baking powder
* 1 tsp baking soda
* salt & pepper to taste
* butter
* OPTIONAL 1 lb of ground turkey

*Heat olive oil in large skillet over medium heat.
* Add cabbage and cook until soft about 10 mins, add salt and pepper
* Whisk together yoghurt, milk, oil and eggs until evenly blended.
* Add in flour, baking powder and baking soda.
* Mix in cabbage until well blended.
(IF you like turkey or want a bit of substance, brown turkey, drain and add to the mix)
* Heat a large skillet over medium heat add butter
* Pour 1/4 cupfuls of batter into skillet and cook until bubbles appear, flip over until cooked (light brown in color)

Oatmeal Cookies

Oatmeal Cookies
* 1/2 cup butter
* 1/2 sugar
* 1/2 cup of honey
* 1 egg
* 1 tsp vanilla
* 1 1/2 cups quick cooking oats
* 1 cup flour
* 1 tsp cinnamon
* 1 tsp nutmeg
* 1/2 tsp baking soda
* 1 cup of chocolate chips (you can use rasins but I'm not a fan so we use chocolate chips)

*Pre-heat oven to 350*
* In medium baking bowl cream butter and sugar together
* Add in honey, egg and vanilla until smooth.
* Mix in flour, cinnamon, nutmeg and baking soda.
* Add chocolate chips or rasins
* Drop spoonfulls onto a greased baking sheet about an inch apart
* Bake for 12-14 mins

Banana Bread

Banana Bread
2 cups flour
1 tsp baking soda
1/2 cup butter
2 tsp vanilaa
3/4 cup brown sugar
2 eggs
3-4 mashed bananas

*Pre heat oven to 350*
* Cream together sugar and butter
* Add in eggs, vanilla and bananas, mix well.
* Stir in flour and baking soda until a nice smooth mix.
* Bake for 60-65mins

Baked Chicken Nuggets

Baked Chicken Nuggets
3 skinless, boneless chicken breasts
1 cup Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
1 tablespoon dried basil
1/2 cup butter, melted
salt & pepper to taste

* Preheat oven to 400*
* Cut chicken breasts into 1 1/2 inch size pieces.
*In a medium baking bowl, mix together the bread crumbs, cheese, thyme and basil
*Melt butter in a bowl that will work for dipping
* Dip chicken pieces into the melted butter, then into the breadcrumb mixture.
* Place well coated chicken pieces on a lightly greased cookie sheet 
* Bake for 20 minutes.

Reverse Stuffed Pepper Casserole

Reverse Stuffed Pepper Casserole:
1 cup of instant brown rice
1 lb of ground turkey
1 large green pepper chopped length wise
1/2 onion
2 tbsp olive oil
1 can of Italian style diced tomatoes
3 cans of tomato sauce
1 tsp onion powder
1 tsp garlic powder
2 cups of shredded mozerella cheese
salt & pepper to taste

* Preheat oven to 350*
* Cook rice according to directions and set aside
* Cook ground turkey until done, drain and set aside
* In a deep skillet saute bell pepper and onion in olive oil, add Italian tomatoes, tomato sauce, onion & garlic powder
* Bring to a boil, cover and simmer for 10 mins
* Add rice and turkey into the tomato mix.
* Pour into 13x9 baking pan and bake for 15 mins, pull out and cover with cheese
* Put back into oven for an additional 5 mins or until cheese has melted

Smashed potatoes

Smashed Potatoes:
4 Idaho Potatoes
1/4 cup of shreaded Colby Cheese
1 tbsp parmesan cheese
1/4 cup of milk
1/4 cup of cream cheese
2 tbsp sour cream
salt & pepper to taste

*Boil potatoes in 3 cups of water until soft (about 15mins)
*Drain and place into a medium baking bowl
* Add cheese and mash until melted
* Add cream cheese and mash until combined
* Add rest of ingridients, mash until a desired texture

Egg Salad Sandwich

Egg Salad Sandwiches:
6 brown eggs
1/2 cup of mayonaise
2 tbsp mustard
1/4 cup of relish
2 tsp chili powder
1 tbsp paprika
salt & pepper to taste
brown bread

*Boil 2 cups of water, add eggs and boil for 10mins
*Remove from stove, drain water and add in cold tap water (I usually rinse a few times to cool the eggs down)
*Peel eggs and place into a medium size baking bowl
*Add rest of ingredients
*Mash, I use a whisk to chop up the egg into tiny pieces
*Cool in fridge for 30-45 mins
*Spread onto brown bread and enjoy!
